Follow directions carefully.
Be sure to back up everything before you mess with anything.

You can sync a device with only one computer (at a time) but you don't have
to de-authorize the "other" computer if you want to change where you sync
your device (unless you're getting rid of the old computer, in which case
de-auth in iTunes may be only one of several de-auth you need to remember to
do).

I would suggest copying the contents of the music folder to an external
drive. Then copy the folder to the music folder on there new computer then
sync again. This I have done and haven't had any problems with playlists,
song info.

If you are trying to sync a device with iTunes that has been synced with
another iTunes library, it will ask if you want to delete what content is on
the device and sync with the content in iTunes.

As for any previous computers that are no longer in your possession, but are still authorized, there's not much you can do short of the 'nuclear option': Contact Apple ITunes support and request the remote deauthorization of ALL computers on your account. You would then need to reauthorize the machines you're still using currently. Even if you send a computer to the shop for repair it's a good idea to deauthorize it before it leaves your house - just in case its situation becomes terminal. You're only allowed five (5) computers on iTunes at a time!

At the tool bar at top of iTunes, click on Store and then click account. It will prompt for iTunes password. Then it will show towards the bottom how many computers see authorized.
