If someone steals an iPod (namely a Classic), can they access anything other than what is currently on the iPod? Would they be able to use it in a way that could cause me a problem?

In the case of an iPod Classic, I would "no". The Classic iPods are completely reliant upon their connection (syncing) with their "mothership computer". So, other than the physical loss, you're safe.
The theft of any iPod Touch is like losing an iPhone. It's full of personal and sensitive data and passwords.
