Does this work?
Select text > right-click > font > click on 'Bold'.
(I'm guessing this would work only if 'Bold" already shows as selected.)

Cmd-Z works if I had just made the text bold, but not for bold text that is pasted and then I attempt to make it plain.

(In other words, Command 'B' toggles Bold.)
