Just did a restore, and some of the app, that were in the touch and work ok before the restore, will not go back in. The touch is 2, with 4.2.1 Software

Adding to my last message, inadvertently sent, my last iPod Touch was a 2nd
gen, and I noticed that majority of the apps that I had, had been updated
and required a higher IOS than what was supported for my iPod which was
also 4.2.1 the highest supported IOS for 2nd gen iPod touch.
If that is not the problem, try downloading the application from the app
store directly from the iPod and that will tell you if the app is supported
or not. once downloaded, sync the iPod.

Not all the ones. but some of the update to 4.3, did work in 4.2 when I download then. Have you tried searching for the missing apps with SpotLight on the Touch?
There is a hard limit on how many apps can be displayed on your home
screens, this limit is less than the number of apps that can be loaded and
ran on an iOS device.
