I don't know if there's anyway to do this with VoiceOver, but I'm low vision, and find I can use multiple fingers to close multiple apps. Really slick.

Thanks for the response, Jay. I'm sorry, but I wasn't specific enough. When I said "messages" I meant text messages. Also, since the 4s has been deactivated I wouldn't have been able to resend anything via mail anyway. Would it be possible to move the texts as file transfers via USB or other means?

Google it, there are "Ways" - you have to back up using iTunes then use a
third party software to look in the backup file for the text messages, etc..
The alternative is to back up your current phone and restore it to your new
phone - problem is you restore all apps, etc I prefer I start fresh with
each phone and only download what I am currently using.
