Just bot a new classic.
After charging it, I'm supposed to go
to Finder to eject, but I can't find out
where in Finder to do so.
Also, how can I tell when it's fully charged?
Your help will be greatly appreciated.

If you are on a Mac there is no need to eject the iPod unless you have it in drive mode. An iPod in drive mode is functionally an external hard-drive and should be treated as thus.

When your iPod Classic is fully charged it will display a "Charged" message on its screen, while it's charging the message will read "Charging." Also, there is a small battery status icon in the upper right corner of the iPod's screen, while charging a lightning bolt is displayed over the battery. When charging is complete the lightning bolt will change to an electrical plug.
