I am planning on selling my 3rd Gen iPod Touch. How do I "clear out" my iTunes user name and password so that the new owners have to enter in their iTunes account info when they purchase music or apps?

Settings > reset > tap erase all content and settings. This will erase
everything and will display apple symbol and the connect to itunes.

My *2nd* generation Touch, and my even earlier iPod click-wheel & Nano, are
no more obsolete than my 9-year-old car. They all still do what I got them
for even if they can't do the latest whiz-bang-stuff.
They can still do plenty!

10.5?
3rd Gen and earlier iPods are obsolete and can't be upgraded to iOS 5, so no
cloud or anything like that. Time to upgrade if you want the new features.
