I have the Starbucks Passport, which i use... it took a coupla trys to get the 'card' to create, but it seems to work just fine...
yesterday i went to my fave local Starbucks, wanted to grab a pound of beans and a latte - needed to reup my card, it wouldn't take
my password... after a few tries the barrista said 'you can catch us next time', this after i said heck w/ the card and tried to pay w/ cash.
i love my local starbucks!

It's just like when you click on the pay now button w/ the Starbucks app -it uses the same info - - i guess it's supposed to save time?

I have used it with United Airlines.
It is not really an App. It is more of an enablement to certain features, like Newsstand is not an App. It allows another App to use certain features that Apple wants to control or protect for the iDevice. Passbook apparently allows certain apps access to Location. For example, it would not show my Denver boarding pass until I got to Denver International Airport.
After I got through the gate, I then had to pull the paper boarding pass out, because I could not find out how to make it show my seat. It is new, and only certain airlines and airports use it. The upgraded United app made the boarding pass QR available to me, but not before getting to the airport.

Surely a matter of choice. I have the same problem. Mail starts up arbitrarily and then starts downloading huge numbers of messages from my Yahoo account. I looked around for means to bypass this a couple of years ago but couldn't find anything.
