Featuring five different planes and four different zones/worlds with 10 levels each, players must master basic aerobatic maneuvers like loops and dives to complete each level. Players control the upward or downward pitch of their plane with a single, thumb touch-control, and nitro boosts for bursts of speed with the control on the opposite side of the screen. Planes can be bought and sold, and additional credits can be earned or downloaded via an in-app purchase.

While the controls are simple, the game itself is quite challenging, even for professional pilots. The pitch control consists of an upward-facing arrow and a downward-facing arrow. Tapping an arrow alters the pitch slightly and the plane then continues from left to right flying at that flight path angle. Touching and holding an arrow provides a continuous increase or decrease of pitch, and releasing the touch control leaves the plane flying at that flight path angle. Touching and holding an arrow without releasing it, results in a continuous loop in place. Gameplay involves careful coordination between the upward and downward controls to level out, navigate through rings, and avoid obstacles.

Playing Extreme Flight Premium, all rings are in the same plane (z-axis), so that pilots must maneuver only on the x and y-axes. Although it is impossible to miss going through a ring if the plane is at the correct height and distance, it is possible to crash into a ring if there is insufficient clearance on either the x or y-axis. When the plane hits a ring or any obstacle the pilot ejects, floats down on a parachute, and the plane crashes, engulfed in smoke and flame. Passing through all the rings on any level requires the player to reverse horizontal direction by flying upside-down or performing a modified loop.

Single-Engine Planes:
* Red Baron (biplane) - speed 1; mobility 1, nitro 1
* White Wing (high-wing) - speed 2; mobility 3, nitro 2

Unlike some flight sims, Extreme Flight Premium is not a side-scroller, where the plane goes up and down as the background scrolls by from right to left. This game is a true flight simulator as the plane can fly to and remain at any position on the screen. Each zone presents a course of rings, each of which must be flown through from the correct side, right or left, top or bottom. Gamers can plan the fastest route that will take them through each of the rings correctly. Bonus stars are earned by going through a ring at high speed using the nitro boost available with the Turbo Regime control. Players must complete all 10 levels and earn at least 20 stars to open a new zone/world. Each of the four different zones is a different location, with unique challenges.

Adding to the game's realism is an unusual method of following the plane on-screen. The screen used for gameplay is the view as seen from a moving camera. Rather than a fixed camera that simply tilts and pans to follow the plane, Extreme Flight Premium uses a camera that is, itself, moving. To create greater changes in visual perspective and add excitement to the game, the camera moves gracefully up and down as the plane moves down and up. On the y-axis, the direction of movement of the camera is the reverse of the plane, though the speed of each may be different. On the x-axis, the direction of movement of the camera is the same as the plane, but not at the same speed.

The traditional method of studying an opening is to pick up a book about one's favorite opening and play the moves and variations over the actual chess board as one reads the book. Many times, one needs an extra chess board to play through the branches. However, one is not able to get tested on how much one learns or remembers from reading the book. The player often finds out at the worst moment. In one of player's tournament games, the player encounters the same variations that he/she has been studying, but forgets the proper continuation.

When reading chess opening books, instead of chess sets, one uses Chess Opening Trainer. This app records the move as the user plays the move. Then, the user trains against the app and try to play through the moves. Chess Opening Trainer smartly plays the variations based on which move the user has the most difficulty learning or remembering. By self-testing like this, the player is assured he has learned the moves. Also, because the moves has been recorded, the player can always at his own convenience (spare time, during train commutes, etc.) review the moves.
